The european butchery methodes on a steer (or heiffer or most other cows) takes advantage of the different meats that run along the inside and outside of the steer's body. the two types of meat can be seen together in most amerikan steaks. the amerikan steaks in order from ribs to hind shanks are club,t-bone,portehouse, pin bone sirloin, sirloin... and there are top and bottom cuts for round steaks, arm and shoulder cut steaks from the from the "square cut Chuck" and there rib and flank steaks.

is ground beef really made mostly out of round/hind shank ??! thats why burger arnt kosher !! kosher butcher get the worst cuts !!!
you want quality meat??? there is emerging a rule of thumb :
you want either a castrated boy or a virgin girl, then you eat their belly or their ass.
the ones that dont have jobs have the best meat sheen and consistancy.
